Homemade "Essence of Chicken"

Chinese believes that essence of chicken is one of the best tonic for both expecting mother and baby. My mother-in-law prepared once for me the homemade essence of chicken. Now, Jo has took over the responsibility.

To prepare the essence of chicken, we need a small kampung chicken, some chinese herbs and a special designed stewer. The stewer must have a filter cap so that essence and chicken can be separated.


It is advised to get kampung chicken as it is organic and healthier. We must remove the skin and chop or smash the chicken to pieces (like what is shown above).


Add some wolfberry, ginseng slices and water. Place the filter cap and put the chicken on top. Cover it before put it into the slow cooker. Stew it for 7 ~ 8 hours.


Due to the special designed stewer, essence will drip to the bottom of the stewer while chicken remain on top of the filter for easy serving. After all these work, you will get a small bowl of essence of chicken as shown. It is advised not to take this essence more than twice a month.
